MUFFINS AL CIOCCOLATO BIANCO E PISTACCHI DI BRONTE

250 g di farina 0
100 g di zucchero di canna integrale
100 g di pistacchi di Bronte sgusciati
300 ml circa di latte di soia
80 gr di olio di riso
una bacca di vaniglia
100 gr di cioccolato bianco al latte di riso
una bustina di cremor tartaro
un pizzico di sale

Accendete il forno a 175° (ventilato) e tritate grossolanamente il cioccolato bianco.
Preparate una capiente ciotola dove mescolerete con cura gli ingredienti secchi (farina, zucchero, vaniglia, cremor tartaro e il pizzico di sale).
In un'altra ciotola mescolate perfettamente la parte umida, latte e olio, che verserete poi sugli ingredienti secchi, mescolando rapidamente solo fino a quando saranno amalgamati tra loro gli ingredienti umidi e quelli secchi. Quindi aggiungete i pistacchi e il cioccolato bianco e mescolate velocemente senza lavorare troppo l'impasto.
